  • Butter: Use unsalted butter for this recipe.
  • Onion: Yellow onion is preferred, but you can substitute with sweet onions or white onions. Save time by chopping the onion in advance.
  • Garlic: Fresh garlic is a must for the best flavor.
  • Heavy Cream: You can substitute with half and half but the dish will not be as creamy. You can also substitute with coconut cream.
  • Dry White Wine: While white wine is traditionally part of Florentine sauce, you can omit this completely, if desired.
  • Italian Seasoning: This is a mix of dried herbs including rosemary, basil, oregano and thyme.
  • Rotisserie Chicken: It’s easy to grab a rotisserie chicken at the store, but you can also use cooked shredded chicken breast or cooked boneless chicken thighs.
  • Baby Spinach: Use fresh baby spinach.
  • Parmesan Cheese: Freshly grated parmesan cheese elevates the flavor of this dish.

Steps to Make Chicken Florentine Soup

Everything for this recipe comes together in one pot!

  1. Melt the butter in a large Dutch oven or soup pot set over medium heat. Add the onion and sauté for 4 to 5 minutes or until softened and lightly browned. Stir in the garlic and cook for 30 seconds.
  2. Add the chicken bone broth, heavy cream, white wine and Italian seasoning. Stir with a wooden spoon and scrape up any brown bits from the bottom of the pan.
  3. Bring to a simmer then add the chicken and spinach. Simmer for 5 minutes, until the spinach wilts and the soup is hot.
  4. Stir in the Parmesan cheese until melted and season with salt and black pepper, to taste.

Serve the soup on its own or with additional shredded Parmesan cheese. For a bit of heat, add some red pepper flakes. And don’t forget a slice of crusty bread on the side!


Recipe Tips

  • Add lemon juice for additional flavor: If you love fresh lemon flavor, then add a squeeze of lemon juice to the pot during the last step.
  • Make this soup dairy-free and paleo: To make this soup dairy-free and paleo, just substitute the heavy cream with coconut milk and omit the Parmesan cheese. You will also need to substitute the butter with olive oil.
  • Add more vegetables: If you have some leftover veggies sitting around, feel free to throw them in the soup. Carrots, mushrooms, celery – they all taste great! Or make chicken artichoke Florentine soup by adding 1 can of drained artichoke hearts.
  • Make a double batch to serve a crowd: You can easily double this recipe in a large pot.


Store leftover chicken Florentine soup in a sealed airtight container in the refrigerator for up to 4 days. There may be some separation with the heavy cream and broth. Reheat slowly on the stove and stir to combine.

To freeze, allow the soup to cook, then store leftovers in a sealed freezer safe container for up to 3 months. Thaw and reheat slowly prior to serving. Don’t reheat too quickly or the broth may curdle due to the heavy cream.
