Baby red potatoes tossed with butter and the savory and salty flavors of everything bagel seasoning are a fun side dish twist.

Simple side dishes are the jewels in the crown of every dinner. They’re also my favorite part of the meal where recipes with baby new potatoes have been knighted as a family fave. They’re quick to cook, creamy, and go with just about everything. My buttery parsley potatoes are a dinner-time staple so when I spied a bottle of everything bagel seasoning in the cupboard, I felt a tasty twist coming on strong.

What’s in Everything Bagel Seasoning New Potatoes

The name of this recipe pretty much says it all when shopping for the ingredients you’ll need to make these taters.

Here’s what you’ll need:

  • Small red potatoes (or small white potatoes)
  • Kosher salt for seasoning the cooking water
  • Everything Bagel Seasoning, or 1 teaspoon each of kosher salt, black and white sesame seeds, dried minced garlic, dried minced onion, and poppy seeds
  • Salted butter
  • Fresh Italian parsley
  • Freshly ground black pepper

How to Cook New Potatoes

Prepare the new potatoes. Lightly scrub the potatoes under cold water and use a small paring knife to remove any major blemishes.

Add the potatoes to a saucepan and cover with cold water. Bring the potatoes to a boil, then reduce the heat to a simmer and cook until tender where the potatoes can easily be pierced with a fork or sharp knife.

How Long to Boil Potatoes

Once the water is boiling, reduce the heat and let the potatoes simmer for 20 minutes or so.

You’ll know the potatoes are done when the skins begin to crack and a fork or sharp knife slides easily into the potato.

Toast the Everything Bagel Seasoning

While the potatoes cook, toast the everything bagel seasoning in a dry skillet. Toasting the seasoning creates a more toasted flavor. I like this mini non-stick skillet to toast nuts and make fried eggs.

What’s in Everything Bagel Seasoning

Purchase a good quality brand of Everything Bagel Seasoning or make your own.

  • 1 teaspoon each of:
  • kosher salt or flaky sea salt
  • white sesame seeds
  • dried minced garlic
  • dried minced onion
  • poppy seeds

Butter, Season, and Shake

Drain the potatoes and return to the pot, then season. Off heat, add the butter, everything bagel seasoning, minced parsley, and freshly ground black pepper to the warm potatoes in the same pot.

Cover with a lid and give the potatoes a good shake or rough up with a fork. With a few good shakes of the pot, the creamy potato centers become a bit more mashed or smashed and creamy.

Let the potatoes sit on the stove for about 10 more minutes. Giving the potatoes a few minutes of rest before serving infuses them with flavor as they continue their residual steam.
