- Parboil the potatoes: First, you will need to parboil the potatoes to soften them. This allows them to cook quicker in the skillet. You can parboil them in a large pot on the stove by placing the potatoes in boiling salted water for 8 minutes. Or you can use your microwave by adding the potato chunks to a large bowl with 1/4 cup water. Heat the potatoes in the microwave for 5 minutes. Gently pat the potatoes dry.
- Cook the potatoes: Preheat a large cast iron skillet over medium heat for 3 to 5 minutes, then add half of the olive oil. There should be enough oil to coat the bottom of the pan. Add a little more oil, if needed. Allow the oil to heat for a minute or two and then add the potatoes in a single layer. Stir gently to coat in olive oil, then let them cook for 3 minutes. Stir them, then cook for another 2 minutes, stirring occasionally to evenly brown. They should be golden brown and tender.
